Xanthan Gum

Xanthan gum is a long chain polysacharide composed of the sugars glucose, mannose, and glucuronic acid.

Xanthan Gum can be widely used as salt and acid resistant thickener. It is a highly efficient suspension agent and emulsifier, a high viscosity filling agent in various food and beverages even when very little is used. It can enhance the performance of water-keeping and shape-keeping (Example: In pastry fillings, it prevents "weeping" (syneresis) of the water in the filling, protecting the crispness of the crust). Xanthan Gum improves the freeze/thaw stability and mouth-feeling of food and beverage products (example: the soft creamy texture of creamy salad dressing comes from Xanthan gum in most cases). It is used in canned pet food to add "cling".

Xanthan has been allowed in foods since 1969 by the FDA and 1974 by the EU where it is known by its e-number E415. It has become one of the most successful hydrocolloids largely due to its high functionality, particularly in difficult environments such as acid, high salt and high shear stress.
